Quick & Easy Food For Your Next Picnic

Most people love picnics because they allow them to enjoy the amazing summer weather and company of loved ones, have some awesome drinks, good food, and just unwind outdoors.

1. Avocado Summer Rolls

The coconut-basil dipping sauce is what helps this snack stand out. The fresh and decadent flavour packs quite a wallop, so be prepared for a party in your mouth.

Ingredients to make the coconut sauce:

  • A quarter teaspoon of sea salt
  • Half a cup of coconut milk
  • Half a clove of garlic
  • A quarter cup of basil
  • A tablespoon of lime juice
  • A tablespoon of cashew butter
  • Half a teaspoon of ginger
  • A quarter of a whole jalapeno

Ingredients to make the rolls:

  • Sriracha and tamari
  • Some sesame seeds
  • Four ounces of cooked rice noodles
  • Six spring roll wrappers
  • A sliced and ripe avocado
  • Four ounces of sliced tofu
  • A half watermelon radish
  • A ripe mango or two ripe peaches
  • Some fresh herbs of your choosing

Combine your salt, garlic, ginger, lime juice, cashew butter, chiles, basil, and coconut milk into your food processor. You will need to pulse until all of the ingredients are thoroughly mixed. You can season to taste if you wish.

Add an inch of warm water to a glass baking dish. Dip a rice paper into the shallow dish for seven seconds. Place the wrapper on a kitchen towel. Place the fillings of your choice in the center of the wrapper.

Fold the bottom over the filling, and then tuck the filling under it. You will then need to fold the sides of the wrapper so that they are placed over the ingredients. Continue to roll and tuck the paper in order to create the roll.

Do the same with the remaining rice paper until you have enough summer rolls for your entire family. Your coconut basil dipping sauce will make a fine condiment to this decadent delight.

You can also serve your summer rolls with some sizzling sriracha and tamari to further stimulate your taste buds.

2. Chickpea Shawarma Wraps

This amazing meal is sure to be a staple in your diet once you try it.

This masterpiece oozes with flavour, thanks to its tangy yogurt sauce, hot and spicy zhoug, and pickled red onions that pack an epic crunch with every bite. Healthy, delicious, easy to make, and easy on the wallet—what’s not to love?

Ingredients to make the spice:

  • Black pepper and sea salt
  • A tablespoon of coriander
  • Half a teaspoon of cumin
  • A tablespoon of paprika
  • A quarter teaspoon of cayenne
  • A quarter teaspoon of ginger
  • Half a teaspoon of cinnamon

Ingredients to make the zhoug:

  • Some fresh ground pepper
  • A cup of cilantro
  • Half a teaspoon of sea salt
  • Two tablespoons of olive oil
  • A quarter teaspoon of coriander
  • A garlic clove
  • A jalapeno
  • A teaspoon of cumin

Ingredients to make the wraps:

  • A handful of mint
  • A dozen quartered cherry tomatoes
  • Four warmed pitas
  • One and a half cups of roasted chickpeas
  • Shawarma spice
  • Some hummus
  • A few pickled onions
  • Two sliced Persian cucumbers

Ingredients to make the yogurt sauce:

  • Some black pepper
  • Half a cup of yogurt
  • A quarter teaspoon of salt
  • Half a tablespoon of lemon juice
  • Half a tablespoon of olive oil

Begin by preheating your oven to 400 degrees Fahrenheit. Take a piece of parchment paper and line your baking sheet with it. To make your shawarma spice amalgam, you will need to combine all of the aforementioned ingredients into a small bowl.

Proceed to season your chickpeas generously. Do not forget to season them before and after you roast them. To make the zhoug, place all of the ingredients listed above into your food processor and blend them.

Once you have reached a pesto-like consistency, you will know that your zhoug is ready. To make the yogurt sauce, you simply need to mix all of the aforementioned ingredients into a small bowl.

Finally, assemble the pitas using some yogurt sauce drizzle, pickled onions, tomatoes, zhoug, cucumbers, chickpeas, mint, and hummus.

3. Orzo Salad

If you have Celiac Disease, then you can replace the orzo pasta with some brown rice or quinoa. You can also opt for gluten-free pasta if you wish. Orzo salad is very healthy, tasty, and economical.

Give this ancient wonder a new lease on life with this delicious orzo salad recipe that will turn your neighbours green with envy!

Ingredients:

  • Black pepper
  • One and a half cups of orzo pasta
  • A cup of basil
  • Greek salad dressing
  • Half a cup of Kalamata olives
  • A tablespoon of red wine vinegar
  • A quarter teaspoon of sea salt
  • A tablespoon of lemon juice
  • Two Persian cucumbers
  • A half a teaspoon of oregano
  • A cup of cooked chickpeas
  • Two cups of cherry tomatoes
  • A third cup of sliced red onions

Bring a pot of salted water to a boil. Add the pasta and boil it according to the directions written on the box or packet. Proceed to drain the pasta, and then toss it with some extra-virgin olive oil.

In order to cool the orzo pasta, you will need to set it on a baking sheet. Add your Greek salad dressing to your sea salt, lemon juice, red wine vinegar, and oregano.

Toss the orzo, olives, feta, red onions, cucumbers, chickpeas, and tomatoes into a large container or bowl. Proceed to drizzle the Greek salad dressing over your salad. Season with some black pepper and throw in half of your herbs.

Toss everything together in order to coat properly. Use the remaining half of your herbs to garnish the dish before you serve it to your mesmerized loved ones.

4. Watermelon Salad with Feta

This succulent and juicy chef-d’oeuvre is sweet and salty in equal measure!

Ingredients to make the dressing:

  • A quarter teaspoon of sea salt
  • Two tablespoons of olive oil
  • Half a cup of minced garlic cloves
  • Three tablespoons of lime juice

Ingredients to make the salad:

  • Some sea salt
  • Five cups of cubed watermelon
  • Half a serrano or jalapeno pepper
  • A cup of finely diced cucumbers
  • A third cup of basil leaves or torn mint
  • A cubed avocado
  • A third cup of crumbled feta cheese
  • A quarter-cup of sliced red onions

Whisk together your salt, olive oil, garlic, and lime juice in a small bowl. Arrange your red onions, cucumber, and watermelon on a platter. Drizzle half of your dressing on top before topping with your serrano pepper, avocado, feta, and mint.

Drizzle the remaining half of your dressing. You can season to taste before serving if you wish. This is a quick, easy, and delicious salad that has many vital minerals and vitamins.

5. Caprese Skewers

If you are really pressed for time, then look no further than Caprese skewers. A few simple ingredients and a few minutes are all that is needed to make them.

Ingredients:

  • Black pepper and sea salt
  • Balsamic reduction
  • Twenty-four cherry tomatoes
  • Olive oil
  • Twelve mozzarella balls
  • Twenty-four basil leaves

Thread your basil, mozzarella, and tomatoes onto your skewers. Proceed to drizzle with your balsamic reduction and olive oil, and then sprinkle with some pepper and salt. That’s it; you’re done!

    Well, I must admit, this article opened my mind to some more elaborate — meaning tasteful — ideas for pic-nics (Who doesn’t LOVE pic-nics??).
    I’ve always tended to stick with the simple, easy recipes (fried chicken, etc… you know), but you’ve now changed my mind!
